Wild garlic Halušky Easy
These are essentially eastern European gnocchi. They are easy to make and are delicious!
Ingredient:
- 500g potatoes, grated
- 150-200g plain flour
- 2 tablespoons of finely chopped wild garlic
- 2 tablespoons of grated Ricotta Salata
- Pinch of salt
Serve with:
- Melted butter
- Fried bacon lardons
- Spoonful of kefir or soured cream
- Fresh herbs
- Wild garlic pesto, optional
Method
For the Halušky- add 150g of the flour, ricotta, wild garlic and salt to the potatoes, combine
You are looking for a sticky, but firm dough, adding more flour if necessary
Bring a pan of salted water to boil
Either use a Halušky or Spätzle sieve or simply pipe the dough into the boiling water
Boil until they come to the surface (about 2 minutes)
Strain and serve with melted butter, kefir, pesto and more grated ricotta
