Watermelon and Coconut Sorbet
A light and refreshing dessert is all you need in summertime. Watermelons are in season at the moment, making them sweeter and more delicious than ever. This means that adding sugar should not be necessary. Just a small scoop is all you need to invigorate the pallet and satisfy that sweet tooth.
Makes a tub with roughly 15 small scoops
Ingredients
- 650g water melon flesh, seeds removed
- Large can of coconut milk
- 1 tablespoon of vanilla extract
- Juice of 1/2 lemon
Method
Blend the above until smooth
Churn until frozen or pour into a plastic container and freeze for 3 hours, stirring with a fork every 30 minutes
