Spicy fennel salad
Ready in a flash and packed with flavour.
Serves 2
Salad ingredients
- 2 fennel bulbs
- 2 tablespoons of fresh dill, chopped
- 2 hot smoked salmon fillets
- Juice from 1/2 lemon
Dressing ingredients
- 1 tablespoons of chilli rapeseed oil
- 2 tablespoons of plain rapeseed oil
- 1 teaspoon of white wine vinegar
- 1 tablespoon of grainy mustard
- 1 teaspoon of honey
- 1/4 teaspoon of salt
Method
Combine the dressing ingredients
Slice the fennel finely (you can use a mandolin) and immediately combine with the lemon juice and leave to stand for 15 minutes
Add the dill and the dressing
Serve topped with the salmon
