Smoked beetroot and cumin hummus
This is a vibrant and delicious snack, which will keep in the fridge for a few days.
Ingredients
- 400g cooked chickpeas
- Juice from 1 small lemon
- 4 tablespoons of dark tahini
- 100g cooked beetroot flesh
- 1 teaspoon of garlic oil
- 60ml boiling water
- 1 teaspoon of ground cumin
- Salt to taste
- 40-70ml smoked oil
Method
Add all the ingredients apart from the oil to a blender or mixer and process
Add enough oil for a smooth texture, sprinkle with cumin, pine nuts or decorate with sliced beetroot and dill and serve
