Roast swede Easy
This is a super simple dish and can be eaten sprinkled with cheese and with a hunk if bread, as a side dish and he leftovers can be blitzed into a puree, soup of even a dip with some cooked legumes.
Ingredients
- 1 swede
- 2 carrots
- 2 parsnips
- 1 shallot
- 2 betteroots
Dressing
- 2 tablespoons of vegetable oil
- 1 tablespoon of dijon mustard
- 1 tablespoon of honey
- 1/2 teaspoon of salt
Method
Preheat the oven to 200C
Peel (or just leave the skins on for texture) and cut the veggies lengthways
Place in a roasting dish
Combine the dressing ingredients and pour over the veg
Roast for 45-60 minutes, until they are all soft.
If they are starting to colour too much, cover the tray with foil.
