Loquat tartlets
Loquats (or Japanese plums) are now available online. However, you can just use apricots for an equally stunning dessert.

Ingredients
- 200g puff pastry, rolled
- 50g mascarpone
- 2 tablespoons of honey plus extra for drizzling
- Pinch of lavender buds, crushed
- 4 Loquats or apricots, halved and stoned
- 2 large pinches of cacao nibs
Method
Preheat the oven to 200C
Combine the mascarpone, honey and lavender in a bowl and spoon into the centre of the fruit
Place down onto the pastry and and cut with a large cookie cutter into neat circles
Place on a baking tray line with baking paper, drizzle with a little more honey and bake for 20 minutes
Scatter the cacao nibs over the tartlets for an added crunch
