Lemon Ricotta on Toast Easy
Easy, yet delicious breakfast or snack.
Ingredients:
- 2 slices of toast
- 150g ricotta
- Zest from 1/2 lemon
- 2 large pinches of ground black pepper
- 2 large handfuls of spinach (or any other seasonal greens), chopped
- 150g mushrooms, sliced
- Oil for cooking
- 1 teaspoon of soy sauce
Method
Preheat the oil in a frying pan and add the mushrooms and cook until golden
Pour the soy sauce in the pan and make sure the mushrooms are coated
Add the greens until they are wilted
In the meantime – toast the bread and combine ricotta with the lemon zest and pepper
Top the bread with the ricotta, greens and mushrooms
