Grilled melon and halloumi
As the barbecue season is upon us, this a great little starter to serve up before the main affair.
Serves 2
Ingredients
- 1 small melon, cut into slices
- 1 block of halloumi
- Chilli oil
- Pesto:
- 1 small bunch of basil
- 2 handfuls of rocket leaves
- 50g toasted pine nuts
- 2 tablespoons of grated parmesan (or a vegetarian version)
- Juice from half a lemon
- 1 clove of garlic
- 150-200ml oil
Method
Make the pesto by roughly blending all the ingredients
Either use the BBQ or a griddle pan for the cheese and melon
Smear either with the chilli oil or plain oil and cook until char marks appear on both the halloumi and the fruit
Serve warm with the pesto
