Grapefruit and chilli salmon
This is a very tasty and visually stunning starter, but easy to make.
Serves 2.
Ingredients
- 100g smoked salmon
- 1 small pink grapefruit
- 1 teaspoon of Fussels chilli oil
- 1/8 teaspoon of freshly grated ginger
- 1/4 teaspoon of ground Kombu seaweed (optional)
Method
Segment half the grapefruit and juice the other
Combine all the ingredients and marinate the salmon for 1 hour in the fridge
Arrange on a plate and top with fresh herbs (dill, chives or baby cress)
