Goats cheese mousse crostini
These make for a wonderful sharing starter or you can serve 2-3 per person with a green salad. Any leftover liquor can be used to liven up a glass of prosecco turning it into a delicious cocktail.

Ingredients
- 1 small baguette
- 200g goat cheese
- 70-100g double cream
- Large pinch of salt
- Handful of fresh or tinned cherries
- Handful of dried cherries
- 50ml cherry liquor
- 1/4 teaspoon of fresh thyme leaves
- A little bit of chopped chives as a decoration
Method
First, cut the baguette into 1/2cm thick slices
Toast them lightly
For the mousse, place the cheese into a bowl with the salt and whisk in enough double cream for a light moussy texture, that is still thick enough to pipe, keep in the fridge until needed
For the sauce, just combine all the ingredients in a small sauce pan, cover with a lid and simmer for a few minutes until thickened and until the cherries have softened
Pipe the cheese on the crostini and top with the warm sauce and chopped chives
