Celeriac, pear and beer samosas
Makes around 20
Ingredients
- 1 pack of filo pastry
- 1 small celeriac
- 1 pear
- 300ml lager
- 1 small onion
- 1 egg, beaten
- Small knob of butter
- 150g grated Quicke’s Ewes’ cheese (or cheddar)
Method
Preheat the oven to 200C
Peel and cut the celeriac into 1/2cm cubes
Peel and chop the onion
Heat a glug of oil and the butter in the pan
Add the onion with a pinch of salt
Cook on medium heat until the onion is starting to brown
Add the celeriac cubes and wait for them to start turning golden
Pour in the beer and leave to simmer for 10 minutes
Core and dice the pear (no need to peel it) and add to the pan
Leave for another 5 minutes until the celeriac is soft and the liquid is nice and thick, leave to cool
Add the grated cheese to the celeriac and combine
Wrap in the pastry, brush with beaten egg (you can sprinkle with sesame or cumin seeds) and bake for 10-15 minutes until golden and crispy
