Deep fried Avocado
Cooked avocado might sound a little strange, but once yo have tried this recipe – you will be hooked.
Serves 2
Ingredients
- 1 avocado, cut into wedges
- 100g gram flour
- 100g corn flour
- Sparkling mineral water, cold
- 2 tablespoons of finely chopped coriander
Method
Combine the flours with the coriander
Add enough sparkling water to form a light batter (consistency of double cream)
Dip the avocado in the batter and deep fry at 190C for 1 minute
Serve immediately!
We served with a coriander dipping sauce: Just blend a bunch of fresh coriander, few mint leaves, large pinch of salt and enough oil to form a light sauce
