Chocolate pancakes
These pancakes are gluten free and can easily be made dairy free.
Ingredients
- 4 eggs
- 60ml milk (dairy or non-dairy)
- 1 teaspoon of vanilla extract
- 1 tablespoon of maple syrup
- Large pinch of salt
- 1/2 teaspoon of baking powder
- 50g coconut flour
- 1 tablespoon of cacao powder
- 45g coconut oil, melted and cooled
Method
Combine the milk, maple syrup, vanilla extract and coconut oil in a jug
Combine the dry ingredients in a bowl
Gradually whisk in the eggs, followed by the milk mixture
Leave to stand for for 20 minutes
Fry in little oil in a medium hot pan until cooked through (2-3 minutes on each side)
Be careful when moving the pans, as the batter is quite fragile
Serve with fruit and more maple syrup
