Cheese Tapioca burgers
These are what ‘fast food’ burgers should be like – ready in no time and with no nasty additives! The buns contain only a handful of ingredients and are ready in 25 minutes. Just a real weekend treat! We believe in keeping the burgers simple – just lots of herbs and spices. Feel free to experiment.

Ingredients
- For the buns:
- 60g Tapioca flour
- 1/2 tsp Baking powder
- 1 tsp smoked paprika powder
- 100g grated cheese
- 1 egg
- Burger:
- 250g beef mince
- Large pinch of salt
- 1/2 teaspoon of smoked paprika
- 1/4 teaspoon of ground ginger
- Large pinch of chilli powder (or to taste)
- 1/2 teaspoon of fennel seeds
- Sprinkling of freshly grated nutmeg
- 1 chopped spring onion
- 1 tablespoon of chopped chives
- For the chips:
- 1 large sweet potato or 2 small ones
- To serve:
- Large tomato
- A Large handful of rocket
- You can add more cheese, but the buns are already pretty cheesy.
Method
For the buns:
Preheat the oven to 200C
Line a baking tray with baking powder
Combine all the ingredients in a bowl
Shape the mixture into 2 large patties and spread out onto the tray Bake for 10-15 minutes or until golden brown
For the burger:
Just combine all the ingredients in a bowl and knead thoroughly
Shape into 2 patties
Place into the hot oven for 15-20 minutes or until just cooked through
For the chips:
Parboil the potatoes for 5 minutes
Leave to cool down
Slice into 6-8 chips lengthways and roast with a drizzle of oil and a generous sprinkling of salt for 20-30 minutes until starting to turn golden
