Buffalo caulifower ‘wings’
These work well as a sharing starter or a snack.
Serves 2
Ingredients
- Florets from 1 small head of cauliflower
- Batter:
- 100ml milk
- 100ml water
- 130g white spelt flour
- 1 tablespoon of smoked paprika
- 1 teaspoon of garlic powder
- 1 teaspoon cumin
- 1 teaspoon of garam masala
- Large pinch of sat and pepper
- 2 tablespoons of hot chilli sauce
- Blue Sauce
- 100ml plain yogurt
- 3 tablespoons crumbled blue cheese
- 1/2 teaspoon white wine vinegar
- 1/2 tablespoon of soya sauce
Method
Preheat the oven to 200C
Combine all the batter ingredients and throughly coat the cauliflower in it
Spread on a baking tray lined with baking paper and bake for 15-20 minutes or until golden
For the blue sauce – just combine all the ingredients and top with freshly ground black pepper
