Black olive tapenade

This makes for a great dip, pasta sauce or seasoning for burgers.

Serves 8 as a dip

Ingredients

  • 1 garlic clove
  • Juice from 1 lemon
  • 3 tablespoons of capers
  • 6 anchovy fillets
  • 250g black olives, stoned
  • 6 sprigs of parsley
  • Oil
  • Black pepper only

Method

Process all ingredients in an electric mixer until chunky
