Baked artichoke
This is a stunning starter or a side dish.

Ingredients
- 4 artichokes
- 100g butter, room temperature
- Zest from 1 lemon
- Salt and pepper to taste
- 1 small bunch of dill, finely chopped
- 1 clove of garlic, finely chopped or grated using a zester
Method
Preheat the oven to 180C
Simply combine the butter with the other ingredients
Stuff the artichoke with the dill butter and bake upright, covered with foil for 40-50 minutes or until soft and cooked through
Serve with juices from the pan over the top
