Apple strudel
Strudel is just such as simple, yet comforting food. You can use a variety of spices and fruit, but we have gone for a relatively classic combination with just a small twist!
Serves 2 as a dessert and breakfast on the following day
Ingredients
- 3 large sheets of filo pastry
- 3 red apples, cored (not peeled) and cut into bite size pieces
- 100g raisins
- 1 tablespoon of ground cinnamon
- 2 tablespoons of desiccated coconut
- 2 tablespoons of honey
- 1 egg
Method
Preheat the oven to 200C
Place the apples in a saucepan with the honey, cinnamon, raisins and coconut and heat gently with a lid on
After 10 minutes, remove the lid and reduce any liquid in the pan
Leave to cool in a bowl
Layer the sheets of pastry on top of each other and pour the filling in the middle
Roll into a sausage and tuck he sides in
Brush with the beaten egg and bake for around 15 minutes or until golden brown
Leave to cool before slicing
Sprinkle with icing sugar and serve
