It’s National Chip Week, which means we can eat chips all week! Ok, maybe not all week (particularly given our Fast Food post), but if you ever needed an excuse, here it is.
What goes with chips? What doesn’t go with chips is a more appropriate question, but we are huge fans of ketchup. Although, homemade of course! Here is our recipe for a smashing homemade ketchup – knowing there are so many good things in it surely makes chips healthier!
You will need:
2 red onions, quartered
150g celery, chopped
2 garlic cloves
1 kg tomatoes
1 teaspoon of Dijon mustard
1 red chilli
100ml red wine vinegar
Salt and pepper to taste
Blend all the above in a free standing blender. Before the next step:
You will need:
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground coriander
1 ground star anise
Pinch of smoked paprika
Heat the above spices in 3 tablespoons of vegetable oil for 1 minute and then add the tomato mixture with 100g dark muscavado sugar and gently simmer for 20 minutes
Bring to a boil and then simmer for another hour
Pour through a sieve
Keep in the fridge in an airtight container for up to a month of freeze for up to 3 months
