Marinated feta
This is a lovely addition to salads, bruschetta or even as an indulgent flavouring in dips. Flavoured oils make the marinating job easy as well.

Ingredients:
- 200ml plain olive or rapeseed oil
- 1 garlic clove, cut in half lengthways
- 2-3 dried birds eye chillies
- Zest and juice from 1 lemon
- 3 sprigs of fresh rosemary and thyme
- 4 dried birds eye chillies
- 1 block of feta (200g)
Method
In a bowl, combine the oil, lemon juice and zest, chillies, garlic and herbs
Cube the feta and place in a glass or plastic tub
Leave at room temperature for around 8 hours
Store in the fridge after that
