‘Jiaozi’ is pretty much synonymous with the Japanese term ‘gyoza’, which was adapted from the Chinese. Essentially it means a small, filled dumpling, usually crescent shaped. There are differences, mostly relating to fillings and flavours, but the overall technique is much the same.
These dumplings have long been symbolically associated with wealth and prosperity, and are traditionally made on the eve of the Spring Festival, then served at midnight to welcome in the new year with a symbol of prosperity and success.
