This is an easy breakfast dish, but does show that you have made an effort. When I had something similar in France (many years ago) I just loved the textures. On my return I think I made it every morning for a month trying different flavours, but the mushroom is a classic! You can add a handful of chopped bacon or pancetta with the mushrooms whilst frying or try something completely different like smoked salmon, lemon zest and steamed  spinach (fresh would be very watery).

You need

(Serves 1)
1 egg
Handful of chopped mushrooms
Salt and pepper to taste
2 tablespoons of double cream
20g grated Parmesan
1 teaspoon of chopped Parsley

ImageTop with the cream, parmesan, seasoning and parsley and bake on 180C for 10 minutes (or just until you have a slight wobble)

Enjoy with some toasted bread….
