Autumnal fruit loaf
This is a delicious afternoon treat and will stay moist for days (if you don’t finish it) thanks to the fruit content.
Makes 1 loaf
Ingredients
- 140 butter
- 250 self- raising
- 1 teaspoon of cinnamon
- 50g coconut sugar
- 1 tablespoon of honey
- 50 nuts
- 50 chocolate chips
- 50 milk
- 2 pears
- 200 blackberries
- 3 eggs, beaten
- Orange zest
Method
Preheat the oven to 160C
Butter and line a 18cm x 9cm (5.5cm deep) loaf tin
Core and chop the pears into 2cm chunks
Add the flour, sugar, butter and spices to a food processor and blitz until combined
Add the chocolate, orange zest and nuts and blitz for 15 seconds, just to break them up
Transfer to a bowl and add all the other ingredients and combine well
Pour into the prepared loaf tin a bake for 75-90 minutes, until the top is golden brown and a skewer comes out clean, with only moist crumb, no batter
Leave to cool and enjoy!
