Pasta Tricks I

This time we make pasta in a n electric mixer, making the process quite swift and straight forward. We tackle flavoured dough and filled pasta.

You will need:
200g ‘00’ flour
1 teaspoon of olive oil
2 eggs
Added flavourings:
1 teaspoon of beetroot powder
1 tablespoon of beetroot juice

Serves 2

To make the pasta use an electric mixer- just pop the flour, eggs, oil and beetroot into the mixer and blitz
The mixture should resemble cous cous and should come together easily
The mixture should also be tacky, not sticky
Rest for at least 20 minutes
Boil in salted water for 2 minutes lift out and serve
