Roast peach and tomato salsa Easy
This is a delicious accompaniment to soft cheeses, served alongside simple grilled meats or oily fish, such as tuna.
Ingredients:
- 2 large tomatoes
- 2 ripe peaches
- For the marinade:
- 2 tablespoons of olive oil
- 1 teaspoon of honey
- large pinch of salt
- chilli flakes to taste
Method
Preheat the oven to 220C
Cut the tomatoes and peaches into mouth sized chunks and place into a small baking tray
Combine the marinade ingredients and pour over the chopped fruit
Bake for 10 minutes
Serve warm
